Cake Pop Flavors: Popular Choices and How to Pick

What is inside a cake pop, popular flavors, and how to match a flavor to the occasion.

Cake pops get noticed for how they look, but they get remembered for how they taste. If you are choosing a flavor for the first time, here is what is inside a cake pop, which flavors are popular, and how to pick one for your crowd.

What is actually in a cake pop

Baked cake, crumbled and bound with frosting, rolled into a ball, set on a stick and dipped in a chocolate coating. The cake flavor and the frosting carry the taste; the coating adds sweetness and the snap. Because the inside is dense and moist, a cake pop tastes richer than the same cake served by the slice.

Popular flavors

  • Vanilla — the safe pick for kids’ parties and mixed crowds; pairs with any coating color.
  • Chocolate — rich and familiar; looks striking under white or pastel coatings.
  • Funfetti / birthday cake — vanilla with sprinkles baked in; the party flavor.
  • Red velvet — a little cocoa, a lot of color; beautiful cut open at a reveal.
  • Strawberry — light and summery; a favorite for showers.
  • Lemon — bright and less sweet; a good counterpoint to a sweet coating.

Matching flavor to occasion

Kids: vanilla, funfetti, chocolate. Showers and brunches: strawberry, lemon, vanilla. Weddings: vanilla and chocolate so everyone finds a favorite, or a flavor that echoes the wedding cake. Holidays: whatever the season suggests — pumpkin spice in fall, peppermint at Christmas.

One flavor or several?

For a small order, one flavor keeps things simple. For 36 or more, two flavors give guests a choice — and a two-color coating scheme makes it easy to tell them apart.

Does the coating change the taste?

A little. White coatings are the sweetest and show colors best, which is why marbled pops are usually made on white. Dark chocolate coatings are less sweet and suit chocolate or red velvet cake.
