How to Store Cake Pops So They Stay Fresh

Room temperature or fridge, how to avoid condensation, transporting pops on a hot day, and what to do with leftovers.

Cake pops are sturdier than most desserts, but how you store them between pickup and the party makes the difference between a glossy coating and a sweaty one. Here is what generally works — recipes and decorations vary, so follow the instructions Sarah gives for your order.

The short version

  • Keep them cool, dry and out of the sun.
  • Room temperature is fine for the day of the event; the fridge is for longer storage.
  • If you refrigerate, let them come back to room temperature in the closed box before serving.
  • Keep them upright on sticks or flat in their packaging — do not pile them.

Day of the party: room temperature

Chocolate coatings are happiest around 65–72°F. Keep the box closed in a cool room — not on the counter by the stove, not in a parked car, not in direct sun by a window. Set the pops out shortly before guests arrive.

Longer than a day: the fridge

Cake pops keep in the refrigerator for several days. Store them in a closed container so they do not pick up fridge smells, and — this is the important part — let the closed container sit at room temperature for an hour or so before you open it. Opening a cold box in a warm room causes condensation, which is what makes coatings look wet and sprinkles bleed.

Can you freeze cake pops?

You can, for a few weeks, in an airtight container. Thaw them in the fridge first, then at room temperature, still closed. Decorated and marbled pops are best enjoyed fresh, so freeze only if you must.

Transporting cake pops

Keep them in the packaging they came in, flat on a seat or in a footwell, with the air conditioning on. On a hot Georgia afternoon, keep the car cool and the drive short, and confirm any cooling needs with Sarah.

Serving

Stands, foam blocks wrapped in paper, or a tall jar filled with rice all keep pops upright and looking good. For favors, leave them in their individual packs until guests take them.

What about dipped Oreos and Rice Krispie treats?

Ask for storage tips for each treat type when you order. In general: cool and dry, closed container, no sudden temperature changes. Rice Krispie treats soften if they get warm, so keep them cool until serving.
